• shamrock                           Irish Soda Bread
     
     
     
    3 cups flour
    1/2 tsp. salt
    1/2 cup sugar (scant)
    2 tsp. baking powder
    2 Tbs. oil
    *1 tsp. baking soda dissolved in buttermilk
    1 1/2 cups buttermilk
    1 egg
    1 cup raisins (optional)
     
    Pre-heat oven to 350 degrees.
    Grease 8" fry pan either aluminum or cast iron.
     
    *It is very important that you dissolve the baking soda in the buttermilk.  Do not add to the dry ingredients.  Make sure it is dissolved and not stuck to the bottom of the measuring cup.
     
    Mix dry ingredients except baking soda.  Dissolve baking soda in buttermilk as instructed.  Add egg and oil to the buttermilk and mix.  Then add to dry ingredients.  Mix and add raisins if desired. 
     
    Spoon into the fry pan and pat top with flour.  Bake 1 hour. 
    About 10 minutes before taking out of oven, spread about one tsp. of butter or margarine on top crust with knife.
